Snowy Mountains Truffles

How lucky are we to live in an area with such great local food producers?

It's truffle season here in the mountains, and we were lucky enough to get some yesterday from Judi at Snowy Mountains Truffles - just enough to play around with. We tossed fresh linguini with egg and butter and then shaved truffle over the top - delicious! We used the rest sandwiched between a beautiful French brie, so that the flavour will infuse through the cheese. The truffle was dug up just that morning by rescue 'truffle-dog' that she's trained.
