Hearty Vegetable Soup/Stew with Lentils & Chorizo
Delicious and hearty and warming. And so thick you can (literally) stand a spoon up in it. Is it a soup, or is it a stew?
Vegetables and lentils are added to our own beef stock, giving not only deep flavour but also all the nutritional benefits of bone broth. Bacon bones are also added to give a background smoky flavour. All the ingredients are slowly simmered till the flavours blend and develop into a really hearty winter warmer.
There's a touch of warmth from the chilli in the chorizo, making it perfect for these cold winter nights (and days).
Serves 2 as an entree, or one hungry person on its own
Our own Beef Stock, Pumpkin, Water, Celery, Onion, Lentils, Chorizo (pork, salt, curing mix [salt, spices, lactose(milk), dehydrated vegetable, dextrose(maize), maltodextrin(maize), vegetable powder, mineral salt 451, antioxidant 316, herb, anti-caking agent 341, sugar, spice extracts 160c, vegetable oil, preservative 250], starter culture, natural hog casing), Carrot, Potato, Tomato Paste, Leeks, Bacon Bones, Olive Oil Blend, Garlic, Salt, White Pepper.
On the cooktop: (When already thawed) Empty pouch into a saucepan and place over gentle heat. Stir occasionally till heated through.
In the microwave: (When frozen) Cut top off pouch. Place onto a plate or bowl, and heat for 4 minutes. Stir. Heat for another 3-4 minutes.
In the microwave: (When already thawed) Cut top off pouch. Place onto a plate or bowl, and heat for 3 minutes - or till hot.
This dish contains milk.
May contain traces of nuts, seeds and eggs.
