Caramelised Pork with Asian Pickles and Rice. The latest authentic dish from our new Singaporean chef (joining our Beef Rendang and Malaysian Chicken Curry).
The pork belly is cooked twice so the fat is completely rendered down and the meat is super tender. It's then tossed in the Asian caramel sauce - adding a lovely caramel-chewiness and flavour to the meat (and the rice that soaks up the sauce). The pickles add balance to the flavours and textures. While there is chilli in the recipe, it's not at all overpowering. It just adds to the flavour and gives a background warmth.
It seems to have become a new fave as some people are ordering 3 or 4 at a time.re to edit.
